Problem is you have to 1: have a pressure cooker in the first place 2: you can't see or stir your onions in case of burning 3: you will most likely have excess water in the pressure cooker when it's done so you will still need to evaporate that liquid by cooking it. 4: it's just for fun when you have a day at home, I'm not making this for speed in a restaurant setting.

You just shake the pot to stop sticking, and yes you evaporate a bit off at the end. You still save 8hrs of energy
