Stepovers, other skills and shoes difference

I can do stepovers well enoughbut only when training, but when i play against someone else (eg 1v1) I always time them wrong and i would like help knowing when to pull them. Please tell me when to use them for 1, 2 and 3 stepovers and also how to practice them at home. Also what other skills are good for wingers. And just one more tihng, if i can train in my runners doing htese skills will i still be able to do them with the real shoes, or will it be too different?
