100g active starter 350g water 500g bread flower Rise for 1hr Stretch and folds every 30min 4x(2hrs) Rest for 4-6hrs Shaped with tuck and turns Ref. over night Preheat oven to 450 with Dutch oven inside Cooked for 30 mins at 450 covered Cooked 15 mins un-covered Cooling rack for 1-2hrs
