Why are there not more fake plays?

I was watching a game where it looked like the offense was going to do a drive down the center but threw a pass instead and it worked really well. I’ve also seen a video where a team was set up to punt on a 4th down but ended up throwing like a 20 yd pass. Why aren’t trick plays like this used more often?
