How does bonus damage work?

Hi, could someone explain how exactly bonus damage works for example from food ?

"50 undead damage bonus" for example? is it added to your base damage or it's added after everything else?

I'm looking for the best possible boss food and 50 bonus damage looks as the best option but it depends on how this exactly works.
