Help with Ogre Ear care

I’m newer to plants and got this Ogre Ear clipping for free. When I first got it the whole branch part was brown but now it is turning green. I haven’t had much luck on finding if that’s a bad sign or not. Also how can I tell if it’s doing ok? It has a new pot and is in a south facing window. I haven’t watered it yet as I didn’t know if I should wait a week or two since it is its dormant season (I think). Should the ears be light green or a dark green? Firm or mushy? Just looking for some guidance as Google was confusing me.
