Games for Two with High Replayability?

So, my husband and I have zero friends that play board games/want to play board games so it's just us.

We're headed on a massive decluttering journey which means we're letting go of most of our games because they just suck with 2 people or flat out require more. (We have a lot of games.) My husband is saddened by this, but is onboard with the reason we're doing it.

I impulse bought Rolling Realms last year and it's been our go to since its quick and every game is different. I cannot stress how much we love this game we've been buying every promo pack and joined the list for the "big box edition" when launches.

We love dice/chance centered games.

Are there any other similar games for 2 with high replayability?
