Submarine crew: how do displays work?

Having watched some documentaries, films, and all the typical tat, I have one burning question.

Do you seriously rely on time/pitch/frequency charts to interpret the surrounding environment?

Surely technology has progressed to the point where a multi-million pound submarine can construct some kind of topographical map of the surroundings using sonar

If my Roomba can create a LIDAR map of the flat, and a Tesla can create a 3D model of the streets it’s navigating, surely submarine crews can achieve a real-time 3D model of the landscape around them?
