what are the best late game and defense civs?

i haven't played this game since release, what civs are good for late game deathballs? where if you stall out the match long enough you just win in imperial age with techs?

and what civs have the best defense/turtle style? i just want to build a giant fortress and defend until my enemies are pissed off they can't break through and then I go kill them :D
