What are your favorite veggie snacks and swaps?

Hey all!

I’ve gained a few pounds this year due to some medications so come January I’m gonna really focus on volume eating so I can still eat plenty while in a deficit. I wanna try making sure I am getting my veggies in as well :)

So far I have some common stuff like cauliflower rice and zoodles but I was hoping to come here to get a few more ideas for easy lower carb veggie swaps and snacks. Any tips or tricks to incorporate more veggies in general would also be greatly appreciated.
