How to show at Tsubaya and others

For shops that brand their knives, do they often have knives with the workshop's brand, alone or together?

If the knife was a blank missing any workshop/sharpener branding would staff be open to questions about the makers?

Also, does anyone know which retailers in Tokyo have stock that aren't house brand?
