Bologna vs. Mortadella

Tonight I did a side-by-side taste test of bologna compared to mortadella. Both meats were bought today at the same deli and were thin sliced. The mortadella was well larded with fat and had peppercorns and pistachios. The bologna was a German style. Six thin slices of each meat were placed side-by-side on a fresh Portuguese style roll served with two slices of Munster cheese and a spicy German mustard then sliced in half with each meat on a separate half of the sandwich. Both meats tasted very similar. The only difference that I could discern was that the mortadella tasted noticeably saltier than the bologna. In this taste test experiment, I would choose the German bologna over the mortadella. However I think more research is needed.
