Sun Hing experience for foreigners

I'm planning a 15hr layover in Hong Kong and I definitely want to try dimsum/yum cha. I was looking for a restaurant in Central/Kennedy Town for lunch (around noon) that wouldn't break the bank and came across Sun Hing as a recommendation. I've been trying to read reviews and what I've gathered is that it's pretty busy, shared tables, and there's an ordering sheet/self service (?) involved.

This is my first time in HK/East Asia so the environment will be new to me. I'm not familiar with Cantonese at all (only English) and I'm wondering if anyone can give me more information on how the service works? Or any other recommendations for dimsum in the area.
