New to Fantasy Recs

Hi there

I am new to the fantasy genre and wanted to know and gather some book series recs.

I’ve currently read the first Witcher book (last wish) The first two Dark Tower books and am currently reading the first Mistborn book.

I am wondering what other series I should check out and if you could, could you please describe the premise of the series?
