Red Lentil Soup with Yogurt and Chili Crunch - 275 cal. 16g of protein.
Made a large pot of lentil soup only using four ingredients: 1 bag of red lentils, 2 cartons of chicken stock, 1 bag of frozen bell peppers/onions from Trader Joe’s, 1 handful of kale (optional/ at the end)(+ salt, pepper, cayenne).
So good on its own, but I added lemon, Greek yogurt, and momofuku chili crunch for an extra kick. Been eating this 4 days in a row for lunch and feel so full and cozy.
Less than 10 min prep and I let it cook on its own for about 30 min.
